Set oven to 325° and prepare a 9"x5" bread pan
In a stand mixer, mix:
1 stick butter (room temp)
150g brown sugar (I prefer dark brown)
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp table salt
1/2 tsp nutmeg (better shaved fresh)
In a seperate bowl, mash and mix:
340g bananas (ripened for banana bread)
85g honey (Use high quality honey, preferably from a local farm or something.)
2 eggs
A tbsp or two of an appropriate jam or marmalade (Optional)
Add banana mixture to sugar mixture and then slowly add 270g of flour until just smooth enough. (There will be a decent amount of lumps.)
